Roussanne and Viognier are from young and Marsanne are old bush vines which have been converted to trellises.
Harvest takes place during the night to keep the grapes as fresh as possible. After a short maceration grapes are gently pressed. Alcoholic Fermentation is done at low temperatures (16-17°C). No malolactic fermentation.
The wine is aged in oak barrels on its lees with stirring. 25% in new oak, 25% in one-year-old barrels and 50% in two-year-old barrels.
The fermentation in French oak barrels gives a perfumed honeysuckle richness to the wine which is complemented by the lime freshness of the tank fermented Grenache Blanc and Roussanne.
This wine can be enjoyed as an aperitif, or with scallops, salmon, poultry, spicy dishes and cheeses.
