80% de-stemmed with daily racking and returning followed by long skin maceration after alcoholic fermentation. 10% carbonic maceration and 10% press wine.
Matured for 14 months in a combination of 40% new American oak, 20% 1 year old American oak and 40% 3 year old French oak barrels.

Concentrated rich chocolate, lavender, plum, berry and spice characters are complemented by a rich concentrated palate with fine tannins.
An excellent accompaniment to lamb, game and other meat dishes, cheese and chocolate.
