Hand picked, pressed and gravity fed into a holding tank for settling overnight. Racked into barrel for the alcoholic and malolactic fermentation.
This wine was bottled following 10 months of barrel maturation in contact with its natural lees.

A perfect marriage between the mineral, citrus characters from the high altitude Chardonnay fruit and the lightly toasted Burgundian oak.
