The grapes are hand picked and pressed. The juice is gravity fed into a holding tank for settling overnight. Racked into barrel for the alcoholic and malolactic fermentation.
This wine was bottled following 10 months of barrel maturation in contact with its natural lees with regular stirring.

A perfect marriage between the mineral, citrus characters from the high altitude Chardonnay fruit and the lightly toasted Burgundian and Bordelais oak.
Can be enjoyed as an aperitif or with rillette, quail, chicken or rich fish dishes. Serve chilled.
